A beautiful bowl of Roma Tomatoes
Make balsamic Roasted Roma Tomatoes
First you cut all the tomatoes in half long way.
Then de-seed them
Then drizzle with 1/4 c olive oil and 1/2 Tbls balsamic vinegar
Then sprinkle tomatoes with
2 large cloves of chopped garlic
2 teaspoons sugar
1 1/2 teaspoons kosher salt
1 1/2 teaspoons basil
fresh ground pepper
Roast at 450* for about 25 minutes
These are so tasty you'll want to eat them straight off the baking pan. My husband who doesn't like tomatoes loves these. I put them in the food processor to make a quick sauce and serve over pasta or grilled chicken. You could top with mozzarella and fresh basil for a nice appetizer.

What we Ate Last Week a little late..
I haven't had much time for blogging lately... lots going on. Hopefully I can get back into the swing of things.

- Spicy Chicken Curry over rice and a homemade coffee and praline cake...

- Chicken thighs cooked in Marinara sauce over penne (really Yummy)
- Wednesday
- Pumpkin latte spiced bread
- sandwiches
- we had dinner at church, not my turn to cook. (breakfast for dinner)
- Thursday
- Cereal
- leftover chicken thighs
- leftover chicken curry
- Friday
- Cereal
- Leftover chicken curry
- Sam ate a late lunch so I didn't need to make dinner, just snacked.
- Saturday
- Was a busy day and Sam had a big sandwich for lunch while I was at my sis-in-laws baby shower. I ate there. Chips, dips and cake.
- We saw a movie that night and didn't eat dinner, we had popcorn.
- Sunday
- Fried egg sandwiches
- Out for Chinese with friends
- Chicken thighs cooked in Marinara sauce over penne, yes again. This was a pioneer women recipe from her blog it was so good I made it again for friends and served it with homemade italian bread and homegrown patty pan squash.
With just two of us we have so many leftovers!
